
Colombian Aji Sauce was introduced to Brooklyn residents in the summer of 2005 when George Constantinou and Farid Ali Lancheros fulfilled their dream of opening up Bogota Latin Bistro. The restaurant's mission from day 1 has been to increase the status and awareness of Colombian and Latino foods. Bogota quickly became one of the neighborhood's favorite restaurant. Many came for a cuisine that reminded them of home or travels to Latin America, while for others it was their first introduction to the delicious variety of Latin dishes the restaurant offers. Colombian Aji Sauce is an obvious must on our menu, complimenting just about everything from chips, empanadas, fish, steak, chicken, pork, eggs, rice and beans, soups and stews.
Aji (pronounced, "Ah-Hee") is Latin America's Catsup. A staple in Colombian kitchens, it lights up everything you put it on. Not chunky like salsa, this sauces boasts no tomatoes. It is refreshing and tangy when it first meets the tongue -- that's the zing of cilantro, white vinegar, onions and scallions. The peppers, a mix of green, red and jalapeno, bite moments later, warming things up without overwhelming the flavor. Our recipe appeals to a variety of palates, from those who love spice to those who shy towards mild. Perhaps this is why, as a guest of ours commented, our aji is "the most miraculous of condiments." In 2005, we had no idea that our Aji Sauce would take off the way it has. Fast forward to August 2010, we have created Bogota Sauce Company, a division of Bogota focusing on selling our homemade sauces. We did a test launch by placing a bottle of homemade Colombian Aji Sauce on every table for guests to use anyway they like and to even purchase one or two to take home with them. Guests tasted how perfect Colombian Aji Sauce is on just about every dish we serve, and now they have the opportunity to bring it to their own kitchens to discover it’s flexibility with whatever they are cooking, whether traditionally Latin or not. In just a few months we've sold over 600 bottles (and still counting)!
Judging from the feedback of our guests, the sales numbers of our aji sauce, the awareness and advocates we've created for the restaurant and for our food, we feel that this is the perfect time to launch this product. We are confident Bogota Sauce Company's Colombian Aji Sauce is the next big small brand not only because it's high time this fantastic condiment be in every U.S. kitchen as it is in Colombia but because, after five years perfecting it, our recipe is outstanding.
